Ultimate Packer Breakfast.
What can I say, I'm a Wisconsin girl born and raised a Cheesehead... It was only a matter of time before I professed my love of the Packers, and with a blow out win against the Panthers on Sunday, I only found it fitting to carry their celebratory win into the work week. So today's post is all about, well, breakfast AND the Packers.
I think it goes without saying avocados do wonders for your body and overall nutrition. With health benefits ranging from healthy skin to improved digestion and improved overall mood, I started to wonder why I don't incorporate this magical food more into my diet. To get this out of the way, let me be the first to admit I am a horrible morning person. No, seriously. I love the morning, but my mind and body don't seem to agree when my alarm clock blasts "the secret forest" every morning (it's a Galaxy thing). You'd think at this point in my life I would be used to this, but everyday when that alarm goes off it feels like I'm in some Twilight episode combined with a repeat of Groundhog Day. My husband and former roommates would laugh reading this post as it doesn't even illustrate my struggle to rise and shine to the daily grind, BUT it is something I'm working on. Now to bring us back on topic (I digress), my 157th attempt at becoming a morning person (aside from the fact I probably just need to go to bed earlier) was to become more cognizant about starting out the day with a good meal and paying extra attention to the way my body feels after eating certain types of food. With that said, once I gained my awareness of the lack of avocados in my nutrition, I had that light bulb moment.
Over the past few weeks I have been like a scientist in a laboratory experimenting on all the different ways I can incorporate avocado as a breakfast food. Avocado on toast, avocado in smoothies, avocado in cereal (I kid, I kid), but you get the point. So this past week I decided to take the leftover avocado from our California burgers we had the night before and use them with my eggs. I know what you're probably thinking here, but let me add I used them with hard boiled eggs (instead of over easy) as a type of breakfast egg salad but without any mayo. Not only was it delish and satisfying, but as I was mixing it together I realized this energy packed breakfast also happens to be the same colors as the Packers! Coincidence?!?! I think not!
So to bring this tangential post to some sort of closure, I wanted to share this energy Packered (heehee) breakfast that also represented my love of the Pack. Has it necessarily made me magically become a morning person? Well, not exactly, but it's a work in progress.
It also got me thinking, do you have anything that helps you get going in the morning? Are you an early riser? Or are you a night owl? (I'm always jelly of those who are both). I'd love some feedback!
Packer Egg Delight: (Difficulty Level: Easy)
Step 1: Boil eggs and peel when ready
Step 2: Cut eggs in half, remove yolks, and set aside in a bowl
Step 3: Add avocado (as much to your liking) to the yolk and semi mix (not too much, but just enough so you can get your green and gold reppin' all while singing/rapping to Lil Wayne's Green and Yellow version of Wiz Khalifa's Black and Yellow)
Step 4: Sprinkle with a touch of salt and scoop mixture into egg whites and enjoy!
*To make this a complete Packer breakfast my husband would argue it would include a shorty of beer, meat, and cheese, but for the sake of the work week let's just keep things simple (and safe).
P.S. I would argue an ultimate Packer breakfast would also include Rodgers, Nelson, Lacy, and Clay.

.....I love you, and this post made me realize how much I miss living with you. Even though it was years ago, it's those little precious moments. PS- I could totally see you rapping while making this breakfast.

DeleteLove this! What a great breakfast idea. You know I'm a morning person, but I treat myself. Every morning I have a piece of dark chocolate before my run or workout that day. It's my little gift to myself for waking up early.

DeleteSounds yummy and healthy! From someone who tends to stick to literally the same thing for breakfast until I get sick of it, I will have to try this. I am definitely a morning person; sleeping in to me is 8am (which I do enjoy doing on the weekend when I can!). What helps me is to not snooze my alarm and getting in a nice run. It can be hard when the alarm goes off initially but the feeling once I wake up and get going is so worth it.
ReplyDeleteI should try adopting the "no snooze" rule. It almost seems more clear cut and it doesn't allow you do abuse the snooze (lol). If you give the breakfast a whirl let me know your thoughts! :)
DeleteI unfortunately have the same relentless battle with my alarm clock every morning so I have zero tips to offer on that topic. I do, however, LOVE avocados and can share one of my favorite (and super easy) recipes.... courtesy of pinterest of course. All you need is avocados, tomatoes, lemon juice, cilantro, and salt/pepper. Start by dicing up 2 avocados. I usually cut in a criss-cross pattern and pop out. Then cut 2 tomatoes into chunks. Next, add about 2 TBSP of lemon juice (I poor on the heavy side -- tastes great and helps prevent the avocado from turning brown). Throw in about 3 TBSP of freshly chopped cilantro and top off with a little salt/pepper! Easy enough, right? As a side note, I substitute the salt and pepper with "Ruth Ann's" from The Spice House. It's the best! It's a combination of salt, pepper, lemon peel, garlic, and onion. I use it to doctor up all my food :) Anyway, the avocado tomato salad is awesome on it's own or you can eat it with crackers. My favorite crackers to use are Flipsides :) Give it a shot... I think you'll enjoy!
